Christophe Merlin had worked many years as a Restaurateur but with a young family, wished to change from evening work to daytime work. For many years, Christophe was general manager at the multi award winning Ring o Bells Pub & Restaurant in his hometown of Thornton, Bradford and approached Ernest Wilsons to find a business close to home but also to work daytimes.
